Reviews and Gruffalo Stew!

Hello my fellow readers, today I have an un-sponsored review teehee. I will be doing this every month or bi-weekly. Drop me a line and tell me what you think. Okay on the menu today is Gruffalo Stew a.k.a pork chop stew or soup a budget meal under $10 for a family of 7. Plus a movie review on the Gruffalo done by my lil ones Lili and Lolo. Let's begin.

Gruffalo Stew a.k.a Pork Chop soup

1 family pack of pork chops bone in
1/2 cup favorite pork marinade I used Goya Mojo
2 bay leaves
4 cups of water
2 cans of tomato sauce
pinch of black pepper
pinch salt
1 packet of Sazon
pinch of Adobo
1 onion diced
1 clove garlic diced
1 cup of rice
1 can great northern beans aka white beans

Marinate pork chops in a bowl or container over night. The next day cut the pork chops from the bone and cut into 1 inch cubes. Then pan fry the cubes in a little oil. when golden brown but not fully cooked set aside to add into a large pot. In the large pot add the 4 cups of water, 2 cans of tomato sauce and the 2 bay leaves. Let water bubble lightly then add the pork cubes, diced onion and garlic and remainder of seasonings for 30 min. Then add the rice and beans and let cook for an additional 20 min on med heat. Tada! you now have Gruffalo stew. you can sub the meat for any type you like or for vegetarian version replace meat with large TVP chunks or Portabella mushrooms either way it will taste great.

Summer's End

Hello my fellow readers, today I have in store some treats as the summer ends and we welcome falls arrival. Today on the menu with Shannon Eats is: summer pudding and ice wine. Along with some beauty by food : Relaxing salt bath. Theme of today Relaxation. I hope you enjoy!


Summer Pudding

Ingredients

  • 10 to 15 thin slices thin white bread, crusts removed
  • 1/2 cup thawed frozen apple juice concentrate
  • 1 1/2 cups raspberries
  • 1 1/2 cups red currants or other berry
  • 2 cups strawberries, hulled, quartered if large
  • 1/2 cup cranberries
  • 1 cup blueberries
  • 1 teaspoon powdered gelatin
  • 1/8 cup cold water
  • 1 cup cold heavy cream, optional

Directions

The day before you plan to serve the pudding, line a 2 quart mixing bowl with plastic wrap. Line the plastic wrap with the white bread slices, trimming to fit so that the pieces fit together neatly. Save enough bread to cover the top of the pudding.
In a saucepan, combine the apple juice concentrate and all the berries. Bring the mixture to a boil and cook until the strawberries begin to soften, about 1 minute. Turn off the heat immediately.
Stirring, dissolve the gelatin in the water, then add the mixture to the berries and stir to combine. Spoon into the bread-lined bowl. Cover with remaining bread slices, cover the bowl with plastic wrap, and slightly weight it down. Chill overnight.
When ready to serve, whip the cream with an electric mixer at high speed until it forms soft peaks.
Remove the pudding from the refrigerator and remove the plastic wrap. Carefully put pudding out onto a platter, remove the bowl and the plastic wrap. Serve in slices with whipped cream on
